Redwood Empire Rocket Top Bottled In Bond Straight Rye Whiskey 750mL

This rare whiskey was bottled under the strict tenets of the Bottled-in-Bond Act of 1897. Aged in the temperate climate of the Northern California coast, the original distillate was altered only by the addition of pure water from the Russian River Valley aquifer. This is the purest expression of Redwood Empire’s craft.

The Redwood Empire stretches from San Francisco to Humboldt Bay and on to the Oregon border. The region is home to majestic coastal redwoods, some more than 2,000 years old. The Patriarch Forest in Humboldt Redwoods State Park is home to Rocket Top, a tree reminiscent of a 365-foot-tall bottle rocket. This rye is as complex and extraordinary as the tree it represents.

Tasting Notes:

Colour: Rust, orange.

Nose: Bergamot, sage, dates.

Palate: Fig jam, caramel corn, cracked pink peppercorn.

"The nose shows rich rye grain, toasted barrel spices, and a fruity mix of apples and cherries. On the palate, the cherry fruit really comes in strong with the hearty rye. Unlike the previous year's BIB bottling, this rye is smoother on the palate and shows less of an herbal note. It's tangy and has a nice bittersweet taste and an oaky back note. By adding water you'll find a sweeter profile, but it's not required. Serving this as an Old Fashioned cocktail would be just grand — and you don't even need to add any fruit!
